Recipe for Kids: Healthy Chocolate Pudding

Little Isadora, 4 years old, makes a lovely raw chocolate pudding with her mother Erika. Kids love to make and eat these kind of dishes.

My five year old daughter loves to juice fruits and vegetables. She makes fantastic combinations. It's really great for a child to make his or her fresh apple juice from real apples, instead of getting it out of a bottle or package. It's such a surprise, if all of a sudden they have apple juice in their glass instead of an apple in their hands.

For children preparing their own raw food meals can be great fun. It's easy and they often love to participate in the kitchen. And ... they usually like to eat the things they made themselves.

Eat more green vegetables or drink their juice. There are so many choices, like organic broccoli, pakchoi, kale, lettuce, mint or whatever you like. They are rich in vitamins and minerals like calcium, magnesium, silica and iron. The nutrients from fresh green vegetable juice enter your bloodstream within 15 minutes.

The Energy of Your Food

Over the past decade, more and more people realize that food is more than just carbohydrates, proteins, fats, water, vitamins and salts. Every food has a certain energy. Wild plants have a lot of it, highly processed foods very little. A living raw food diet has a lot, foods from the magnetron hardly any. In Eastern philosophy this is a well known fact. This energy is at least as important to us as the nutrients in the food.

In Chinese Medicine there is lot of knowledge about this.
Foods can be categorized in:

Yin or yang
Warm or cold
Taste: sweet, sour, pungent, salt or bitter
Movements: inward, outward, upward, downward
Working on specific meridians and organs

Depending on a your condition or constitution, you can choose the food that's most appropriate for you. If you are always cold, you have a cold condition, if you are always warm, you have a warm condition.

A banana for instance has a very cold energy, cayenne a hot energy. If you are warm by nature and living in a warm climate in summer, bananas are fine. In that case, be careful with a lot of cayenne.
If you are cold by nature and live in a cold climate in winter, be careful with bananas. You would be better off eating warm foods, like soups from vegetables that are in season, warm drinks, dried fruits, and hot spices like cayenne and ginger.
If you have a weak digestion, this means that you don't have enough digestive fire. In this case avoid cold foods and take the more warming foods. Don't eat anything straight from the fridge or icecream.
Children have a weaker digestion than adults and need more warmth to grow. Be careful with cold foods like bananas .... which they often love. Porridge used to be a basic food for kids and there is a definite reason for this, it's nourishing and warming.

By the way, raw food is not the same as cold food. This is a big mistake many people make. More on this subject soon.

Basic Nut Milk Recipe

Ingredients:
1 cup of soaked almonds, macadamia nuts, sunflower or sesame seeds
soak the almonds or macadamia nuts for at least 4 hours
3 cups of water or coconut water
a pinch of salt

If you use whole almonds, change the soaking water a few times and throw it away.
First pour boiling water over them, than icecold. This way it's easy to peel them and they stay raw. Don't let them sit in the boiling water of course.
Blend all ingredients in a powerful mixer for about 2 minutes or until completely smooth.
Strain them through a cheesecloth or nut milk bag.
Squeeze the milk out.
If you want, you can rinse the blender, pour the nut milk back into the blender and mix it with (for instance) raw chocolate and agave for raw vegan chocolate milk.

You can use the pulp for sweeties, deserts, crackers or nut pate's.

Superfoods Breakfast Smoothie

Ingredients:
1 tablespoon of raw cacao
1 tablespoon of hempseed
1 teaspoon of maca
30 goji berries
1 teaspoon of spirulina powder
1 teaspoon of chlorella powder
1 cup of warm water
1 pinch of cayenne
10 cashews
2 tablespoons of agave nectar

Blend everything for one minute.
This smoothie gives energy for hours.
A great raw food diet boost.

Raw Food Diet Detox

Juicing is a great way to detox. Especially vegetable juice is good for this purpose. But fruit juice is fine as well. Or combine them.
I wash my juicer once a day and make juice whenever I want during the day.

Juicing is a great way to eat/drink a lot of fruits and vegetables. It’s easy and healthy. Yes, it does take some time to make your own juice, but you will have so much more energy afterwards, that you won’t mind spending a little extra time, once you are used to it. Especially if you do it on a regular basis, you will definitely feel the difference. It's the raw food detox, especially in spring.

When I first started juicing, I did it first thing in the morning. I made the most delicious juices from all kinds of fruits and vegetables, preferably vegetables. Because of the fresh juice in the morning, I had a lot of energy. And ... without even noticing, I stopped drinking coffee in the morning (the only time I had a cup of coffee). This was absolutely effortless. The energy of the juice felt so great, that I did not have that dip in the morning and I did not even think about coffee. The raw food detox took place without me noticing it.

For those of you, who are not familiar with juicing, here are some suggestions:
- Vegetable juice from celery, carrot, spinach (and if you like dandelion)
- Vegetable juice from lettuce, carrots and cucumber
- Vegetable juice from white cabbage, kale and carrot
- Vegetable/fruit juice from spinach and apple
- Vegetable/fruit juice from carrots and apple
- Fruit juice from apple and a peeled orange
- Fruit juice from pear and apple

There are so many great combinations. The best way to find out, what you really like, is to experiment. Children too, enjoy drinking fresh juices. You will be amazed! Juicing works great to introduce them to the raw food diet.

To be able to make your own juice, you need a good juicer. I have a 750 Watt Philips juicer, that works great. This is an investment, you will never regret, if you have the discipline to keep juicing! And you will have the discipline, once you feel the great benefits.

Vegan Greek Salad by Salma

Salma sent me this recipes of a Vegan Greek Salad:

Ingredients

Salad
1 carrot
1 cucumber
3 leaves of iceberg lettuce
15 black olives(pitted)
10 cherry tomatoes
handful of walnuts or pine nuts
Wash and cut the raw veggies.
Put them in a nice bowl.

Dressing
2 tablespoons of peanut butter, chunky
2 table spoons of lemon/lime juice
4 tablespoons of grape seed or olive oil
First mix the lime juice and oil. Then add the peanut butter.
If you like, you can add some white pepper or cayenne.

Mix the salad and the dressing and keep in the fridge for 15 minutes.
And there you go! Its filling .....

Eat more wild herbs from your own backyard (,if you have one).

Quick Healthy Winter Salad

Ingredients:
1/2 head of white cabbage, shredded
1 carrot shredded
1 avocado, pitted
juice of 1/2 lemon
1 tsp of whole grain mustard
few tbsps of pure water

How to prepare:
Mix the cabbage and carrot together in a large bow. Mix the avocado, mustard, and lemon juice with a fork until smooth (you may use a blender if you like). Add water if necessary. It should have the consistency of mayonnaise. Pour the dressing over the salad and toss.
Tip: you can prepare the cabbage & carrot in large quantity and save in the refrigerator for few days. Then you’ll always have some ready for a quick salad. To prepare, you’d then only have to add the dressing.

Raw Uncooked Food in Winter

You like the idea of raw uncooked food. But you live in a cold climate and it's winter. You've been working in the garden outside in the cold wind. Snow flakes are falling and you're cold to the bone.

You're going inside put on warm slippers and sit down at the fireplace. If you could just warm up with some hot chocolate or warm soup. The salad in the fridge you prepared this morning is the last thing you want right now.

It's one thing to be a raw foodist on Hawaii, but eating raw food in a cold climate in winter time is a completely different story. I currently live in the Netherlands. It's December now - windy and rainy. There are no (local) fresh fruits available and most people want to warm up.

How to enjoy eating raw uncooked food when you live in a cold climate is one of the questions I'm asked most here. But when you know what to do you might feel quite nice and comfortable in winter.

Gabriel Cousens did research in Alaska and found that 95% of the raw foodist were successful. He asked them what they did and I'm sure these tips might help you to stay warm in the winter. I'll write their suggestions down below.

Why do you feel cold?

When starting a raw food diet, many people release toxins. This might make you feel cold. Further when you're raw, you're body temperature drops. It takes some time to get used to the new body temperature.

However, after a while on raw food, your arteries clear up and your circulation improves. Actually, most people that have been eating raw uncooked food for a while say that they're never cold! They even swim in ice cold water in the winter. So it seems to be a transition issue.

But there are things you can do to stay warm in winter. First of all, it's a misconception that you can only eat COLD foods when you're on a raw food diet. YOU CAN EAT WARM FOODS, just don't heat them above 120F (water 160F). Most people cook their food and then let it cool off until about 110F before they eat it anyway. So you may heat your raw uncooked foods up to 110F , just the right time for eating them...

Tips from Alaskan raw foodists

- More exercise.
- Cayenne in socks and cloves.
- Add more heating spices to food, cayenne, ginger, peppercorn.
- Raw doesn't mean your food has to be cold. You can warm food up to 120 for 2 minutes. (just stir and when it becomes to warm to touch.)
warm up plates.
- Take cold salad from fridge in dehydrator/oven for few minutes to make it room temperature. - Put warm sauces/salad dressings over your salad.

These tips should help you to feel warmer while eating raw uncooked food. If you feel you need to eat grains in order to stay warm, choose the whole non stored varieties such as quinoa, millet and buckweed.
