Creamy celery soup, a delicious and light summer soup



This creamy celery soup is a delicious and light summer soup.

Ingredients
2 cup shaved celery root
3 cups diced celery
3 cups macadamia nuts or pine nuts
1 t Himalayan salt
¼ cup lemon juice
4 cups water
tomatoes, chopped mint and shaved celery root as a garnish

Blend all the ingredients for 2 ½ minutes. Garnish with some celery root en tomato.
Top it off with fresh mint.

In 1993, when the cell phone industry's chief lobbyist hired epidemiologist and pathologist Carlo to refute claims that cell phones, which had never been subjected to premarket testing, cause cancer, no one thought he would discover otherwise. But after six years of exhaustive analysis and scrupulous peer review, the results proved, according to this report, that radiation from a cell phone's antenna can cause the formation of micronuclei red flags for cancer in the brain. Children in particular are more susceptible to the radiation than adults. Carlo reported his findings to the industry and the FDA and advocated for continued research, but both parties still maintain that cell phones are safe.

The research is not conclusive, but Carlo and Schram think it's disturbing enough to warrant government action. Needless to say, the industry that once backed Carlo's work now considers him persona non grata.

When you do grow wheatgrass at home, make sure it doesn't get moldy.
I think growing your own wheatgrass with real sunlight, on real soil and fresh air is always better, as long as it is free from bacterial and fungal contamination.

Commercial wheatgrass is always handy to have at hand when you are traveling or if you don't have time to grow your own. It's better to take the commercial version than none at all, since wheatgrass contains so many valuable nutrients.

Quinoa Salad - Diabetes Recipe from Tree of Life



Quinoa is a very ancient grain. It comes from South and Central America. Quinoa is high in protein.

This recipe is with cooked quinoa is considered a fase 1 diabetes recipe, which means that all diabetes patients can eat it, even when on a strict raw food diet. It doesn't raise blood sugar.
This quinoa salad is great for lunch or dinner. You can make extra for the next day.
It gets even better after a few hours or a day in the fridge.

Ingredients for one person
1 cup quinoa
2 cups good quality water
1/2 bunch cilantro, basil or parsley, chopped
1 diced tomato
1 stalk of celery
1/2 avocado
1/4 t chili powder
2 t cumin
1/2 - 1 t Himalaya salt or sea salt
2 T olive oil
2 T lemon juice
optional 1/2 bell pepper and a clove of garlic

Bring the quinoa and water to a boil.
Let is simmer for 15 minutes and cool down.
Mix all ingredients and enjoy this nutritious salad.

Is it okay to add grains to your raw food diet?

This is one of my favorite questions, having a macrobiotic and raw food background since 1972.
Being honest, I personally feel better if I add some cooked grains to my raw food diet.
And …. I’m not the only one. At the leading raw food communities, the Tree of Life in Arizona and Israel and the Hippocrates Institute in Florida, there are some grains on the menu.

There are two ways in which you can eat grains.
Of course you can sprout them or grow wheat- or barley grass and eat them raw. This way you can add grains to your diet and still eat 100% raw.
Another way is to add some cooked non-stored grains, like wild rice, quinoa, buckwheat, millet and amaranth to your diet. Even diabetes patients do well on these grains. You can cook the grains for about 15 minutes and eat them with a raw (for instance tomato) sauce, use them in a salad, in desserts or as a breakfast cereal.

If you do want to eat grains, the ones mentioned above are best. Stored grains like wheat, rye, oats and barley ferment in ninety days. Within that time mycotoxins are formed, toxins produced by an organism of the fungus kingdom, which includes mushrooms, molds and yeasts. These are a hazard to our health. Research has shown a correlation between different forms of cancer and mycotoxins.

If you do want to eat some grains, feel how your body reacts. Too much of them may cause too much acidity and make you feel tired and heavy. Always add good quality salt if you cook grains. This makes them more alkaline. Find your ideal balance.
In some cases it’s better to add cooked grains to your diet, than to eat too much of the sweet fruits, like mango or banana or a lot of nuts for the sake of your caloric intake.

So far I found that many long term vegetarians and raw foodies lack minerals, vitamin B12 and are undernourished in general. Adding some non-stored cooked grains might be very helpful in those cases.

Under the Sea Salad from the Tree of Life in Arizona



This diabetes friendly recipe, made by chef Michela from the Tree of Life in Patagonia, Arizona, tastes great with lettuce leaves, in a nori roll, with crackers or with chopped vegetables. You can make a lighter variation in summer and a creamier one in winter.
This pâté lasts for about three days in the fridge.

Ingredients:
2 cups nuts or seeds of choise
2T lemon juice
2T dill, minced
1T oregano, minced
1t black pepper, ground
1t sage, minced
1t kelp powder
½ t Himalayan or sea salt
1/3 cup celery, fine chopped

What do you think about the culture of “death” that Gabriel talks about?

My answer:

Very often I’ve heard Gabriel speak about the culture of life and the culture of death.
This week my son and I did an experiment. After not eating any meat for years, we ate out and had some lamb. Yes I know, shocking for a raw food teacher ;-)
I wanted to feel the effect. And I can say: it was enormous.

Normally, on my raw food diet, I always feel very happy. Everything works out fine and I trust the universe for what is happening.
After the meat both me and my son felt off track. This was especially clear in our dreams. My son had all kind of dreams in which everything was out of control. In my dreams I was worrying all the time, which was useless and absolutely unnecessary. The next day we had some kind of a hangover.
After eating lots of greens, some superfoods and drinking lots of good quality water we felt better.

For me the whole experience was so clear: the lamb couldn’t control what was going on in its life and of course it was worrying. Probably it saw other lambs being slaughtered. I´ve even heard that lambs cry, when they are slaughtered. In this state, with lots of adrenalin in its body, it died. This energy is what we take on if we eat this meat. This experience of the culture of death was so clear to me. Negative emotions were coming out of the blue after eating the meat: the culture of death.

Now I understand even better why a vegan diet can cure depressions and other psychological problems.
On a vegan diet consisting of fresh plant food, I always feel happy and connected: the culture of life.
