Lucuma-yacon ice cream with Ani Phyo
Ani Phyo makes a delicious lucuma flavored ice cream made with cashews and sweetened with yacon.
Ingredients
1/2 cup lucuma powder
1 cup cashews
vanilla extract or a vanilla bean
1/4 cup yacon syrup (or agave, maple syrup or honey)
1 cup filtered water
Blend, freeze and enjoy this delicious caramel ice cream!

Creamy celery soup, a delicious and light summer soup
This creamy celery soup is a delicious and light summer soup.
Ingredients
2 cup shaved celery root
3 cups diced celery
3 cups macadamia nuts or pine nuts
1 t Himalayan salt
¼ cup lemon juice
4 cups water
tomatoes, chopped mint and shaved celery root as a garnish
Blend all the ingredients for 2 ½ minutes. Garnish with some celery root en tomato.
Top it off with fresh mint.

Quinoa Salad - Diabetes Recipe from Tree of Life
Quinoa is a very ancient grain. It comes from South and Central America. Quinoa is high in protein.
This recipe is with cooked quinoa is considered a fase 1 diabetes recipe, which means that all diabetes patients can eat it, even when on a strict raw food diet. It doesn't raise blood sugar.
This quinoa salad is great for lunch or dinner. You can make extra for the next day.
It gets even better after a few hours or a day in the fridge.
Ingredients for one person
1 cup quinoa
2 cups good quality water
1/2 bunch cilantro, basil or parsley, chopped
1 diced tomato
1 stalk of celery
1/2 avocado
1/4 t chili powder
2 t cumin
1/2 - 1 t Himalaya salt or sea salt
2 T olive oil
2 T lemon juice
optional 1/2 bell pepper and a clove of garlic
Bring the quinoa and water to a boil.
Let is simmer for 15 minutes and cool down.
Mix all ingredients and enjoy this nutritious salad.

Under the Sea Salad from the Tree of Life in Arizona
This diabetes friendly recipe, made by chef Michela from the Tree of Life in Patagonia, Arizona, tastes great with lettuce leaves, in a nori roll, with crackers or with chopped vegetables. You can make a lighter variation in summer and a creamier one in winter.
This pâté lasts for about three days in the fridge.
Ingredients:
2 cups nuts or seeds of choise
2T lemon juice
2T dill, minced
1T oregano, minced
1t black pepper, ground
1t sage, minced
1t kelp powder
½ t Himalayan or sea salt
1/3 cup celery, fine chopped

Flax crackers, basic raw food recipe with Karen Knowler
Karen Knowler shows how to make flax crackers, a basic raw food recipe.
You need a food processor and dehydrater or normal oven for this recipe.
Ingredients:
1 cup of flax seed
1 cup fresh tomatoes
1/2 red bell pepper
1/4 cup of sundried tomatoes, best pre-soaked
small clove of garlic
juice of half a juicy lemon
Process all the ingredients and dehydrate them.
Enjoy your delicious crispy flax crackers.

Raw food video: How to make raw vegan sushi and nori rolls
In this video, you can see the basics of making raw vegan sushi. Make sure to have the black nori sheets, they are raw. Some Asian stores sell green nori sheets, which are roasted. Instead of wasabi, you can take fresh horseradish, which is very similar to the main ingredient of wasabi and often used as a substitute. It has a strong flavor, so be careful. And buy raw natural nama shoyu, not the commercial kind.
Personally I add more things to the nut pâté, like fresh herbs, lemon and tomato. You can also use sprouts and edible weeds inside your sushi or nori roll. To close the noriroll, wet the seam with a little water. Press gently to make your roll firm enough to cut it into small slices. It´s a great idea to put it in the freezer for five minutes before slicing.

Edible weeds: Dandelion with Sergei Boutenko, Harmony Hikes
Dandelion is an edible weed, that you can find almost everywhere in northern climates. All parts are edible: the roots, leaves and flower. There are 300 different kinds of dandelion, all edible. They have different sizes. If you want to check, if you have a dandelion, flip over the leaf and check the main vein. It should be smooth, not hairy. If you are not sure, don’t eat it.
Dandelion is good for:
- Arthritis, anemia, breast cancer and cancer in general, candida, cysts and urinary tract infections.
- Dandelion is good for is good for the kidney, liver, gallbladder (not mentioned in this video), bladder, pancreas and spleen.
- Emotional satisfaction and wellbeing.
It contains the vitamins A, B, C en according to some even vitamin B12.
It contains the minerals beta-carotene, phosphor, magnesium and calcium.

Fast and easy raw food recipe for a cashew cheese sandwich
This is a very fast and easy raw food recipe. Within a few minutes you prepare a whole meal.
Take cabbage or romaine lettuce leaves, make a nut pâté, add some sprouts and if you like other vegetables and create a fantastic and nourishing raw food dish.
Ingredients nut pâté:
1 cup cashews
½ sunflower seeds
2 limes
1 cup red bell peppers and yellow bell peppers
½ handful parsley
1/4 red onion
2 cloves of garlic
little rosemary
pinch of sea salt
For the sandwich:
cabbage or romaine lettuce leaves
nut pâté
sprouts
optional: cucumber, black olives, more onions, mushrooms, more bell pepper
Mix the ingredients for the nut pâté in your food processor or blender.
Make a pretty fine puree with a little bit of chunks, not like a smoothie.
You can also add olive oil, more salt, cayenne, chili powder or curry, whatever you like.
Take the cabbage leaves, add the nut pâté and sprouts and other vegetables and make a sandwich out of it.
You can put in on a bed of rucola or spinach with a little salad dressing on top and your meal is ready!

Dr. Barbara Hendel: how to make sole from Himalayan crystal salt
Dr. Barbara Hendel demonstrates how to make a sole drink from natural Himalayan ground salt or crystal salt and natural spring water for a daily energizing and detoxifying drink.
This sole drink is very easy to make. You dissolve Himalayan ground salt or crystal salt in good quality water. Use enough salt, so that there is still salt visible on the bottom. This way you make a sterile salt solution of 26% salt.
Take a teaspoon or half a teaspoon of this sole and mix it into a glass of good quality water. Drink this every morning on an empty stomach. This sole drink contains the energy of the sun (sole means sun in Latin) and is great to build up energy. It also helps your digestion and to detoxify.
You can take this sole every morning for six weeks or two months, stop for a while and start again. You will feel much better and have more energy.

Victoria Boutenko makes raw almond milk, an easy raw food recipe
Victoria Boutenko makes raw almond milk. In this video you see, how fast and easy it goes. Going to the store to buy soy, rice, nut or cows milk takes a whole lot longer and is much more expensive. A Vitamix (or any other blender) full with fresh almond milk costs you about 50 cents.
You can keep this nut milk in the fridge for about two days.
Instead of almonds, you can use sunflower seeds, macadamia's, cashews, walnuts, sesame seeds or any other kind of nut or seed. It is best to soak nuts overnight or at least four hours before you use them. This makes them easier to digest. Throw away the soaking water.
The leftover pulp from the nuts is great in salads, desserts, pies, dehydrated crackers or smoothies. You can also make seed cheese from it.

Beautiful mixed sprout salad with lovely edible flowers
Look at this beautiful dish, full with living foods in the most beautiful colors. Do you ever want to have a hamburger again, if you can have this on your plate. I wish I had these fantastic foods here in the Netherlands. I'm sure I'm going to find out, how to grow these lovely sprouts and edible flowers. My kids will love the flowers on their plate and be even more proud of their raw food diet.
